Creates a new value (option) for a select-type field (SINGLE_SELECT, MULTI_SELECT, TAG). The field must be a select-type field, otherwise the request will be rejected.

STATUS fields are not supported. Although status values look similar to single-select options, they are managed through the status lifecycle (not this endpoint) and cannot be created here.

If color is omitted, the system automatically assigns the next available color.
